An elegant, aromatic, cool climate Cabernet Sauvignon from Elgin; richly flavoured, with a sumptuous complexity with notes of dark chocolate, tobacco leaf and cedar. A velvety finish of juicy plums lingers on the palate.

Harvest date: 20 April Cabernet Sauvignon/ 27 March, Cabernet Franc/ 1 April, Merlot  27 March

Yield: 7.1 t/ha

Vineyard site: North facing slope, with deep, well drained soil comprising ironstone fragments

Alcohol: 13.5%

Total acidity: 5.6 g/l

pH: 3.65

Residual sugar: 3.7 g/l

 

Vinification

The grapes were harvested at 24.2ºB in the

cool of the morning, and soaked on the skins for five days at 12ºC for optimal flavour and colour extraction. The wine was fermented dry on the skins, then racked to French oak barrels for malolactic fermentation. Maturation took place in barrel for 11 months.

An elegant, richly textured cool climate Blend from Elgin; ripe fruit, with vanilla and cigar box notes, a sumptuous complexity and fresh acidity. A velvety finish of juicy plums, and fruit cake, which lingers on the palate.

barrels for malolactic fermentation. Maturation 

took place in barrel for 11 months.

Syrah '11

 

 

An elegant, flavourful cool climate Shiraz from 

Elgin; fruity, with a sumptuous complexity and 

fresh acidity. A velvety finish of juicy plums, 

blackberry with hints of cocoa and cassis which 

lingers on the palate.
